When cooking large amounts of pasta we like short cuts that serve up easily, catch the sauce well and are easy to eat. We’ve included one long pasta, Bevette(Linguine), for when you  want a certain look and sauce.

Our favorite sauces to cook at home are:

Bevette: Cacio e Pepe is the classic dish made with a Pecorino Romano and Parmigiano cheese blend, some pasta water and good ground black pepper. You can also add butter or olive oil to enrich it to your liking.

Farfalle: Still love the simple peas, butter and pepper. You can add diced carrots, pancetta, fresh herbs and/or chicken stock. There are hundreds of variations so be creative.

Fusilli: The classic tomato Bolognese clings to the coils so well. We like to sauté some hamburger and make a hardier sauce.

Penne Rigate: The most popular is great with a fresh tomato sauce and chunks of sautéd vegetables. We like a little hot pepper flakes on a foggy day. How about you?

Pippette Rigate: This is a great shape that mixes well with a chunky sauce of all vegetables or more like a stew. The bits and pieces fall into the tubes and you eat it all at once.
