Cheeses should be lower in fat, on the solid side or firm and not to sharp in flavor. You can food process a blend but it is easy to get your provolone and mozzarella sliced and then just layer it in. Bake the lasagna with foil on it and then turn up the heat and remove the foil until the top cheese browns to a golden crust. Depending on the cheeses used and how rich you want your lasagne a cream sauce is optional. The classic flavor is to add just a dash of nutmeg to a layer and it should come out so you have to think about what that hint of sweetness is. Nutmeg is the secret to many cheese or cream sauces in Italian cooking.
